Mechanical Ventilation

The primary function of a Mechanical ventilation system is to improve the the air quality of the kitchen by capturing and discharging water vapour, heat, odours, smoke, grease and other pollutants generated by the cooking process.

There are various rules and regulations in place regulating the construction requirements for food premises. The Food Standard Code provides that “Food premises must have sufficient natural or mechanical ventilation to effectively remove fumes, smoke, steam and vapours from the food premises.” Therefore, the majority of food premises, which undertake active cooking on site, find that they require mechanical ventilation in order to comply with these regulations.

The type and frequency of cooking as well as food processes undertaken, is critical to the overall design of the ventilation system and compliance with the rules and regulations.
